At Supperland, our cooking is rooted in craft, patience, and a deep respect for ingredients. We start with the fundamentals—like the sourdough starter that anchors our porridge bread—and we add freshly milled einkorn and cooked-down Marsh Hen Mills grits. We build from there. Every pastry, pie crust, and Brie bite begins with doughs we laminate in-house, because we believe great food comes from the details you can’t rush.
Fire is the heart of our kitchen. Upstairs, we cook without gas or electricity, relying entirely on wood fire in all its forms: vegetables slow-roasted directly in the coals, branzino seared on the plancha, steaks kissed by glowing embers, and dishes subtly smoked in the wood-fired oven. This spectrum of fire cooking shapes the flavor of nearly everything we serve.
Even the smallest touches are made from scratch—our cocktail sauce, potato chips, Jezebel sauce, and all of our ice creams, both sweet and savory. Our kitchen techniques reflect both precision and resourcefulness. The Pork Can-Can requires a meticulous cook that renders both loin and belly to perfection. Every steak is butchered in-house, with trimmings simmered down into stocks, broths, and sauces that enrich the rest of the menu.
We champion local makers and unexpected regional ingredients, like North Carolina–grown miso or Osetra Caviar coming from Marshalburg Farms in our state—because the best flavors often come from close to home. This is how we cook at Supperland: with intention, imagination, and a commitment to doing things the thoughtful way.
At our “southern steakhouse meets church potluck”, we cook like southerners have for generations—with much of our produce sourced nearby. To do so, we partner with FreshList, the folks who bring us goodness from more than 200 regional farms. It’s local, it’s fresh, and it just makes everything taste better.
